Spelt and Oat Pear Muffins

So I have something exciting to share with you and I can’t believe I’ve waited this long to share it.  Back when the school year first started I finally bought my very first stand mixer.  Yes, I was a food blogger without a stand mixer.  Please don’t poke fun.  I’m also still a food blogger(with three kids) and no dishwasher but we wont get into that.  Anyways, I broke my last hand mixer shortly before and finally decided to get a stand mixer.  So I ended up getting a Bosch mixer with a blender attachment(which solved my blender problem too!)  And I had some brown bananas and some too soft pears on the counter so these muffins were some of the first things I made in my mixer.

I actually wasn’t even planning to share this recipe.  I was just baking to use up the fruit I had on the counter and to put some muffins in the freezer so they’d be ready to go for school.  I started out using one of the more popular muffin recipes on Food Doodles, my Spelt Oat Banana Muffins and then changed them into these.

Sometimes the banana in banana bread or muffins is just too much for me, but these are just perfect.  I’m assuming you could use all pear, or even applesauce but I haven’t tried that out yet.  I loved these just as is and they were gone incredibly fast, so I thought I’d share.

Spelt Oat Pear Muffins

Ingredients
  • 1½ C whole spelt flour
  • ¾ C old fashioned rolled oats
  • 2½ tsp cinnamon
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp sea salt
  • ¼ C pure maple syrup(or honey)
  • ¼ C sucanat(or brown sugar)
  • ½ C butter, melted
  • 2 large eggs
  • 1 C mashed banana(or applesauce)
  • 1 C mashed pear
  • 1 tsp vanilla
  • ½-3/4 C semi sweet chocolate chips
Instructions
  1. Preheat oven to 350 degrees. Prep a muffin tin by lining with paper liners or by lightly greasing and set aside.
  2. In a small bowl whisk together the spelt flour, oats, cinnamon, baking soda, baking powder, and salt.
  3. In a larger bowl stir together the maple syrup or honey with the melted butter, eggs, banana, pears and vanilla. Add the dry ingredients and stir together just until combined adding the chocolate chips at the very end.
  4. Divide the batter evenly amongst the 12 muffin cups and place in the oven to bake for 17-19 minutes until a toothpick poked into the center of a muffin comes out clean.
Notes
For the mashed pear I simply took soft pears, peeled them and mashed them with a fork. I mashed a little extra and let it sit for a few minutes while measuring out other ingredients and then poured the extra liquid off the top since my pears were especially juicy.
