Banana Chocolate Chip Baked Oatmeal is a yummy, and easy way to start your morning! It’s great for leftovers and easy to take on to go once it’s cooled in the fridge.
Thank goodness mornings around our house aren’t too difficult. I’m not exactly a morning person. I think I’ve become a morning person out of necessity, but some mornings take a little extra effort. Between packing lunches and getting everyone dressed and ready to be out the door for the bus stop including myself, breakfast kind of gets pushed to the back burner. That’s where baked oatmeal comes in.
If you’ve never experienced baked oatmeal, you’re missing out. Go try it now. It’s not the most time saving recipe ever, but the leftovers are what make this recipe amazing. This recipe in particular is so good I even packed it in my sons lunch two days in a row(and there was disappointment on the third day when it was all gone). You see, the awesome thing about baked oatmeal is that it holds it’s shape once it’s cooled. You can of course scoop it while it’s hot and it’ll be just as delicious and amazing, but I really love baked oatmeal after it’s had a chance to sit in the fridge and then you can slice it into nice neat little squares. And strangely enough it’s just a delicious cold as it is warmed up. I highly recommend a square of this straight from the fridge on a really rushed morning.
After I added a dollop of Greek yogurt to mine I couldn’t help but think of how yummy a spoon full of peanut butter would taste on top of this oatmeal for breakfast. Mmm. Next time I will be doubling the recipe for sure so it lasts a little longer, and will be adding peanut butter to my bowl 🙂
But even just on it’s own I think you’ll fall in love with this oatmeal. Enjoy!
- 2 C old fashioned rolled oats
- 1 C milk(I prefer almond milk)
- 1 C mashed bananas
- 1 tsp baking powder
- ¼ tsp sea salt
- 1 tsp cinnamon
- ¼ C honey or pure maple syrup
- ½ C chocolate chips
- ½ C chopped walnuts, optional
- Preheat oven to 375 degrees. Prepare an 8x8 baking dish by lightly greasing.
- In a bowl combine all the ingredients and stir together well. Pour into the prepared baking dish and bake for 35-38 minutes until golden. Cool for a few minutes before serving.
You can also add up to a half a cup of dried fruit to this if you'd like!
