I made theses cookies today with spelt because I had not used any spelt in a long time. I ground it fresh and weighed it on the scales the same as you called for the whole wheat. I froze most all the cookie dough balls. Cooked a few to see how they would turn out. Shared them with 2 people at school and my husband. They LOVED them. I forgot to roll them in sugar but it must not have mattered. I also used honey granules for the sweetener. I did the white choc. and peppermint and left some plain. Looks so festive. This is a keeper!
