Red Beans And Rice

I love one pot meals.  While this isn’t totally a one pot meal as you have to cook the rice and beans… it can be if you’re using leftovers that are already cooked and waiting in the fridge.  I don’t know what it is, one pot meals aren’t always that much easier, but there’s something about sitting down to a bowl full of something that feels so good, especially when it’s a complete meal in a bowl.  Although I do like to serve it with a salad or some extra veggies.  With the leftovers I like to cook up some vegetables, usually roasted broccoli or cauliflower or whatever else is in the fridge and just serve them on top of a bowl of this.

One note though, you might want to go easy on the Cajun seasoning.  I make my own and so I tone the spice down to a level we’re comfortable with, but I know store bought Cajun seasoning can be really spicy.

I heart beans+ rice!! I have never used liquid smoke. I think I need to get some!

It’s really good stuff. It actually persuades my husband to try things when it smells smokey. Plus, it doesn’t have any funky ingredients, there should just be one or two 🙂

Your red beans and rice is so flavorful, I love all the herbs spices in there! And the fact that it’s a one pot meal is a total bonus. 🙂

This may sound dumb to those that know……….but what is liquid smoke? Have never heard of it and don’t think I’ve seen it over here in the UK.
Would love to try this recipe and we love all things that are smoked so hope someone can give me the heads up on where to buy.

That’s OK! I”m not sure if it’s available in the UK! It’s kind of like an extract(the only ingredients are smoke and water) but I believe it’s usually in the grocery tore next to bbq sauces.
