Crispy Peppermint White Chocolate Bark

This crispy white chocolate bark has a very easy secret that makes it so crispy.  Topped with crushed peppermint candy canes, this makes a perfect addition to your cookie tray, but it also makes a wonderful and easy gift!

Today I have for you this delicious peppermint white chocolate bark!  And when I say delicious, I really, really mean it.  My husband prefers it without the candy canes to be honest, but only because of how the peppermint candy can get stuck in your teeth. Mind you, without candy canes it’s not exactly peppermint, is it?  The kids and I love it with candy canes, although not as much as the original recipe called for.

So I guess what I’m trying to say is, make this recipe what you want!  I bet it would be amazing if you did some with white chocolate and some with milk or dark chocolate and swirled them together.  Or maybe just a milk or dark chocolate drizzle before the candy cane sprinkle.  That’s something I have to try.  If you prefer to add more candy canes like the original recipe called for, that is awesome too.  I also bet you could make an amazing crispy bark with all sorts of delicious toppings instead of candy canes.  Let your imagination run wild!

I will close this post out and just say this makes an incredible gift and to be honest, it takes very little time.  You can even put the pan in the fridge for 20 minutes to harden the chocolate as fast as possible, just don’t leave it in there or it wont be as crispy.  Literally just break this into smaller pieces, wrap it up and you’re good to head out the door to a party.  Keep this in mind next time you need a last minute gift!

  • 3/4 lb white chocolate
  • 3-4 cups Rice Crispies
  • 3-4 candy canes, broken up
  1. Prepare a baking sheet with wax paper and set aside.  In a microwave safe bowl melt the white chocolate in small increments of time, stirring in between.  Or use a double boiler or bowl placed over a simmering pot of water to melt the chocolate.

  2. Meanwhile measure out the Rice Crispies and set aside.  Place the candy canes in a Ziploc bag and crush the candy canes and also set aside.

  3. When the chocolate is melted, stir into the rice Crispies until completely mixed and pour onto the prepared baking sheet.  Roughly spread out then sprinkle with the crushed candy canes.  Place another piece of wax paper on top and press down with your hands to compact the candy and spread it into one even layer.

  4. Cool completely, then remove the wax paper and break into small pieces.  Store in an airtight container.

The better quality white chocolate, the better this bark will be.  I use good quality white chocolate chips and it turns out delicious every time.

If you prefer more chocolate/less Rice Crispies, the original recipe has a slightly different ratio you might prefer.
