Fall Recipe Roundup

Since my kitchen has been full of these for a week now.  Since I spent all day yesterday turning these into 15 quarts of salsa.  And since my kitchen will be full of tomatoes and peppers and plums and apples for a couple more weeks until I get everything stored away…

Since real, all day school for my son has only been going for two weeks and we’ve already had two separate – at home on the couch wrapped in blankets – sick days(And not to mention an unrelated hospital visit that thankfully wasn’t too serious)…

Since this week is almost over and I can’t stop thinking about Food Doodles and my lovely readers but haven’t been able to spend any creative time in the kitchen…

…I thought I’d do a fall recipe roundup while I’m busy finishing up canning, freezing and drying all the produce coming in from our yard.  These are my favorite fall recipes, full of winter squash of course, to tide you over until I get back to regular posting.  I can’t wait to make some of my favorites again!  And I really can’t wait to get back to sharing more delicious recipes with you!  For now…  Enjoy!

 

My favorite Butternut Squash Soup

Quinoa Stuffing Stuffed Squash – We eat this filling ALL the time.  If you want, just put the quinoa mixture in a casserole dish and bake until the edges are crispy.  Perfection!

Crispy Baked Squash Fries

Vegetarian Quinoa Chili….

   

…served with Savory Cheddar Cornmeal Waffles

Vegetarian Stew with Dumplings – pure comfort food!

Homemade Creamy Mushroom Soup

Pumpkin Pie Steel Cut Oats – in the crockpot!

Pumpkin Chocolate Chip Muffins – These are my favorite muffins, and work just as well with all whole wheat pastry flour(or even all purpose flour) for a less dense muffin 🙂


Cinnamon Raisin Brown Rice Pudding

 

Crispy, Pumpkin Pie Spiced Sweet Potato Fries

And of course… Homemade Pumpkin Pie Spice

ooooh man I want those steel cut oats!!! It makes me sad that I’m about to move in with someone who dislikes pumpkin and pumpkin pie flavored stuff. Better make a batch of that before I move!

Yummmmm….everything looks so delicious. That chili over the savory waffles is making my mouth water. Love the savory waffle idea! My kids will go crazy for those!

More sweets, more sweets! 🙂 Actually, I’d love to post some savory fall recipes like you do but I don’t normally like them. So I’ll stick with sweets.

I hope your sons stops getting sick. Two separate days in two weeks is crazy. Have a great weekend!
