Raw, Vegan, Grain Free Blueberry Nectarine Crisp(For one!)

Ingredients

  • 1 nectarine sliced or chopped as desired
  • 1/4 - 1/2 C fresh blueberries
  • 1 small squeeze fresh lemon juice
  • 1 large Medjool date pit removed
  • 2 tbsp raw almonds
  • 1/4 tsp vanilla
  • pinch sea salt
  • generous pinch cinnamon

Instructions

  • Place all ingredients except blueberries, nectarine and lemon juice in a food processor or blender(I even used my magic bullet to make this!).
  • Blend until the date and nuts are completely ground up and no large pieces remain, scraping down the sides as needed.
  • Place fruit in a bowl and drizzle with a little lemon juice and sprinkle the crumble mixture over top. Top with slivered or sliced almonds if desired and enjoy!

Notes

This recipes makes just one serving, but you can always increase the amount of servings as desired, just multiply by how many people you're serving!
