Coconut Cherry Almond Muesli

Ingredients

  • 2 cups oats
  • 1 cup coconut
  • 1 cup oat bran
  • 3/4 cup almonds coarsely chopped
  • 1/2 cup dates roughly chopped
  • 1/2 cup dried cherries sweet or sour, cut in halves or quarters
  • 1/4 cup flax seed meal or chia seeds

Instructions

  • Preheat the oven to 350 degrees.  On a baking sheet combine the oats, coconut, oat bran and almonds.  Mix well and toss in the oven to toast for 15 minutes, stirring once half way through.  Remove and let cool before mixing in the dates, cherries and flaxseed meal or chia seeds.  Make sure to fully combine everything so that the fruit is evenly distributed in the mixture, and doesn't stick together.  Once completely cool store in an airtight container in a cool dark place to prevent the flax from going rancid.  If you don't plan to use it up in a couple months time, omit the flaxseed meal and just add a couple teaspoons or a tablespoon when you serve yourself a bowl.
  • To serve, mix as much as you want with milk, yogurt or half a recipe of your favorite smoothie and enjoy immediately.  Or mix up the night before and enjoy in the morning :)
