Banana Oat Scramble

Ingredients

  • 1/2 banana mashed
  • 1 tablespoon nut butter peanut butter, almond butter, coconut butter, or whatever you like
  • 2-3 tablespoons milk dairy or non dairy - I use unsweetened almond milk
  • 1/2-1 teaspoon spices cinnamon, pumpkin pie spice, chai spices, etc
  • 1 tablespoon coconut or other dry ingredients such as oat bran, ground nuts, wheat germ, etc.  In this one I used this crunchy quinoa
  • 1/2 tablespoon chia seeds or ground flax
  • 3 tablespoons rolled oats
  • a tiny pinch of sea salt
  • 1 tablespoon nuts dried fruit, chocolate chips, etc(in this case I used walnuts)
  • 1/2 teaspoon vanilla

Instructions

  • Mix all ingredients in a bowl and let sit for 3-5 minutes.  Prepare your pan by lightly spray it with oil before placing it over medium heat.  Once the pan is hot drop the batter into one large pancake or patty or two smaller ones for easier flipping.  They should be no more than 1/2" thick.
  • Cook at least 3-4 minutes on the first side before checking, then look to see if it's golden on the bottom.  Once it's golden, flip and cook till it's golden on the other side.  You can serve it on a bun or english muffin with jam or nut butter and fresh fruit, or just on a plate like pancakes.  Top with your usual pancake toppings or nut butter, jam, fruit sauce, or just fresh fruit.
