1tablespoonnut butterpeanut butter, almond butter, coconut butter, or whatever you like
2-3tablespoonsmilkdairy or non dairy - I use unsweetened almond milk
1/2-1teaspoonspicescinnamon, pumpkin pie spice, chai spices, etc
1tablespooncoconutor other dry ingredients such as oat bran, ground nuts, wheat germ, etc. In this one I used this crunchy quinoa
1/2tablespoonchia seeds or ground flax
3tablespoonsrolled oats
a tiny pinch of sea salt
1tablespoonnutsdried fruit, chocolate chips, etc(in this case I used walnuts)
1/2teaspoonvanilla
Instructions
Mix all ingredients in a bowl and let sit for 3-5 minutes. Prepare your pan by lightly spray it with oil before placing it over medium heat. Once the pan is hot drop the batter into one large pancake or patty or two smaller ones for easier flipping. They should be no more than 1/2" thick.
Cook at least 3-4 minutes on the first side before checking, then look to see if it's golden on the bottom. Once it's golden, flip and cook till it's golden on the other side. You can serve it on a bun or english muffin with jam or nut butter and fresh fruit, or just on a plate like pancakes. Top with your usual pancake toppings or nut butter, jam, fruit sauce, or just fresh fruit.
