Vegan Creamsicles

Ingredients

Banana Coconut Cream Popsicles:

    Coconut Cream Layer:

    • 1 can full fat coconut milk
    • 1/4-1/3 cup sugar or slightly less honey
    • 1 tablespoon vanilla

    Banana Layer:

    • 2 over ripe bananas
    • 1/4 cup coconut mixture

    Mango Coconut Cream Popsicles:

      Coconut Cream Layer:

      • 1 can full fat coconut milk
      • 1/4-1/3 cup sugar or slightly less honey
      • 2 teaspoon vanilla

      Mango Layer:

      • 2 large ripe mangos
      • 1/4 cup water to puree
      • 1/4 cup sugar or other sweetener such as honey optional

      Instructions

      For the Banana Cream Popsicles:

      • To make the coconut cream layer, mix the can of full fat coconut milk with the sugar and vanilla, making sure to mix in the coconut cream part at the top of the can.
      • For the banana layer, add the two bananas and 1/4 cup of the coconut mixture(or to reduce the sweetness and amount of sugar used, use plain coconut milk before blending the coconut layer together and reduce the sugar in the remaining coconut cream layer) to a blender and blend until very smooth.  If you continue to blend for a minute or two you can actually incorporate some air into the banana mixture which will make it even softer once frozen.
      • To freeze add a layer of whichever flavor you want to start with to the bottom of your popsicle molds.  Place it in the freezer for 30-60 minutes before pouring the second layer and adding the popsicle stick.  If you wish to do more than two layers, fill the molds less full with each layer and freeze for a shorter period of time before pouring the next layer making sure the layers don't completely freeze before adding the stick.   When all the layers are done freeze for 1-2 hours or overnight to ensure that all the layers are completely frozen.  To remove from the mold pour hot water over the underside of the mold until the popsicles are easier to remove

      For the Mango Cream Popsicles:

      • To make the coconut cream layer, mix the can of full fat coconut milk with the sugar and vanilla, making sure to mix in the coconut cream part at the top of the can.
      • For the mango layer place all the ingredients together in a blender and blend until very smooth.  The sugar is optional, if you have very sweet mangos and wish to avoid using a lot of sugar, omit the sugar.
