Homemade Almond Pepita Sesame Honey Kind Bars

  • 190 grams roasted unsalted almonds (a little more than 1 1/4 cups)
  • 40 grams roasted unsalted pepitas (about 1/4 cup)
  • 20 grams toasted sesame seeds (about 2 tablespoons)
  • 1/2 cup puffed grain cereal (make sure to use GF cereal, if necessary!)
  • 2 tablespoons honey
  • 2 tablespoons light corn syrup or brown rice syrup
  • 1/2 teaspoon vanilla bean paste optional
  • Sea salt to top


  1. Preheat oven to 325 degrees.

  2. In a bowl stir together all the ingredients except the sea salt.  Prep a 9x9 baking dish with parchement paper, then pour the mixture in and spread it evenly, pressing the mixture down as well as possible. 

  3. Place in the oven and bake for 18-20 minutes until the syrup can be seen bubbling in between some of the nuts and seeds.  Remove and let cool.  

  4. If possible when the mixture has cooled quite a bit but not completely, take a sharp knife and cut into 9 squares. They may come apart a little, but just gently press back together and let them cool the rest of the way.   I place them in the freezer for 10-15 minutes or so until hard. Then store in an airtight container between sheets of parchment or wax paper.

Recipe Notes

I don't recommend using regular vanilla in this recipe.  If you don't have vanilla bean paste, just omit it.  The bars will be just as delicious.  If you're curious about the vanilla bean paste I use this one from Amazon(this is an affiliate link which doesn't change anything for you, but gives me a few cents from every purchase that goes towards maintaining Food Doodles :)
