  • 1 1/4 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups salted butter
  • 1 3/4 cups sugar plus more for rolling
  • 2 large eggs
  • 2 teaspoons vanilla

  1. Preheat oven to 350 degrees. Line a baking sheet or two with parchment paper or a non-stick liner. Set aside.
  2. In a bowl stir together the flour, cocoa powder, baking soda and salt.
  3. In the bowl of your mixer or in a medium sized bowl with a hand mixer beat butter and sugar until fluffy. Add the eggs one at a time and beat until incorporated. Add the vanilla and beat till combined.
  4. Add the dry ingredients to the wet and beat just until combined and no flour remains.
  5. Scoop 1" balls of dough and roll in granulated sugar. Place on the prepared baking sheets, 2" apart. Place in the oven and bake 10-12 minutes until puffed up and crackly on top.
  6. Remove from the oven and let cool on the baking sheet for 2-3 minutes, until firm enough to transfer to a cooling rack to cool completely.
  7. Enjoy as-is or decorate with a little white chocolate and crushed candy cane sprinkles.
