Cherry Tomato Bruschetta with Parmesan Cheese

  • 2 cups cherry tomatoes cut into small pieces
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1/4 cup fresh grated Parmesan cheese
  • 3 large cloves garlic finely minced
  • 1/4 cup lightly packed fresh basil leaves
  • Salt and pepper to taste


  1. In a bowl combine the tomatoes, olive oil, balsamic vinegar and cheese and garlic.
  2. Roll basil leaves tightly together and thinly slice. Cut into smaller pieces if desired and add to the bowl.
  3. Stir together and taste, adding more oil and vinegar as needed and then season with salt and pepper as needed. Tastes amazing right away, but tastes even better if left for at least 30 minutes before serving.
