Roasted Banana Almond Butter Streusel Bread

Ingredients

  • 2 C whole spelt flour
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 1/2 C maple syrup
  • 1/4 C coconut oil
  • 2 eggs
  • 2 C mashed roasted bananas approx. 4 large
  • 1 tsp vanilla
  • 1/2 C sucanat or brown sugar
  • 1/2 C smooth natural almond butter

Streusel topping:

  • 1/2 C whole wheat flour spelt or pastry flour is fine
  • 1/4 C chopped almonds
  • 1/4 C brown sugar
  • 1 tsp cinnamon
  • 2 tbsp oil

Instructions

  • Prepare the roasted bananas by placing unpeeled bananas on a baking sheet and baking at 350 degrees for 15-20 minutes, until black and juicy. Once done, cool enough to handle, open and squeeze the banana out. Mash well and set aside for use in the recipe. Alternatively, fresh or previously frozen bananas can be used in place of the roasted bananas.
  • Preheat oven to 350 degrees. Prepare a standard sized loaf pan by greasing lightly. Set aside.
  • In a large bowl combine the flour, chopped almonds, sugar and cinnamon for the streusel. Drizzle in 2 tbsp of oil and stir just until clumpy. Set aside.
  • In a bowl combine the flour, cinnamon, baking soda, baking powder and salt.
  • In a separate bowl stir together the maple syrup, oil, eggs, mashed bananas, vanilla, brown sugar and almond butter.
  • Add the wet ingredients to the dry ingredients and stir well. Place in the loaf pan and sprinkle the streusel topping over top, mounding in the middle. Place in the lower third of the oven and bake for 55-60 minutes until a toothpick comes out clean. Then turn out and cool completely on a wire rack.

Notes

Check the bread after 20-25 minutes of baking and if the streusel is browning too quickly, tent with a piece of foil to protect the streusel from burning and continue to bake until done. You may also want to place a baking sheet under the loaf pan as some of the streusel may fall off as the bread bakes.
