No Bake Vegan Peanut Butter Chewies

The raw, vegan, healthy, no guilt version of your favorite peanut butter cookie!

Ingredients

  • 3/4 C Medjool dates pits removed
  • 1/2 C natural peanut butter
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 generous pinch sea salt
  • 1/4 C whole peanuts
  • 1/4 C chocolate chips or roughly chopped dark chocolate bar

Instructions

  1. In a food processor, process the dates until they form a "dough".
  2. Turn the food processor off, break up the dough using a spoon, and then add the peanut butter, maple syrup, vanilla and sea salt. Process until thoroughly combined.
  3. Add the peanuts and chocolate chips and pulse just until combined.
  4. Remove the dough. Roll into bite sized balls and either store in an airtight container at room temperature or in the fridge or flatten with a fork before storing.

Recipe Notes

Almond butter chewies would be an awesome variation!
