A simple honey sweetened apple crisp with a twist in the form of fresh, tart cranberries and a little spice from fresh ginger.

I used a smaller but deeper pan for mine and had to cook it slightly longer. If your fruit needs more time to cook and the topping is already brown, place a piece of foil over the crisp to prevent it from browning too much.
If your honey is solid just warm it slightly till it becomes liquid again.
To make this crisp vegan sub out the honey for your favorite liquid sweetener and serve with your favorite non-dairy ice cream.
