Chai Spiced Apple Butter Crumble Bars

Whole grain apple butter crumble bars. Perfect to keep on hand in the freezer - these are better than any bars from a box.

Ingredients

  • 1 C +2 tbsp old fashioned rolled oats
  • 3/4 C white whole wheat flour
  • 1/3 C walnuts
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp sea salt
  • 1 tsp cinnamon or chai spice
  • 1/4 C coconut oil melted
  • 1/4 C almond milk plus 1 tbsp extra milk if needed
  • 1/3 C coconut sugar or sucanat
  • 1 tsp vanilla
  • 1 C apple butter

Instructions

  1. Preheat oven to 350 degrees. Prepare an 8×8 pan by lining with parchment paper(so that the bars can be lifted out) sprayed or brushed lightly with oil. Set aside
  2. In a small bowl combine the oats, flour, walnuts, baking soda and baking powder, sea salt and cinnamon.
  3. In a larger bowl, stir together the oil, milk, sugar and vanilla until combined.
  4. Add the dry ingredients to the oil and milk mixture. Stir well until completely incorporated.
  5. Pour slightly more than half of the batter into the prepared 8×8 pan. Spread out so that the mixture covers the bottom of the pan.
  6. Place pan in the oven and bake for 10 minutes until partially cooked.
  7. Remove from the oven, spread the apple butter evenly almost to the edges of the pan. Using a spoon, drop small amounts of the remaining batter over the top of the apple butter as evenly as possible.
  8. Return to the oven and bake for 18-20 minutes until golden.
  9. Remove from the oven and cool 15 minutes before lifting the edges of the parchment paper to remove the bars from the baking dish. Place the bars(and the paper) directly on a wire rack and cool completely before cutting and serving.

Recipe Notes

I used coconut oil and almond milk to keep these bars vegan, but butter and any dairy milk could be used in these if desired.

Brown sugar can also be subbed for the coconut sugar.
