Quinoa Chickpea Pilaf

Ingredients

  • 1 large onion chopped
  • 3 large cloves garlic minced or pressed through a garlic press
  • 1 tablespoon oil
  • 1 tablespoon ground coriander
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2-3 tablespoons tomato paste
  • 3/4 cup quinoa rinsed
  • 2 cups chickpeas or one can drained and rinsed
  • 1/2 cup water or veggie stock
  • A squeeze of lemon juice

Instructions

  • In a medium sized pot heat the oil over medium heat.  Add the onion and saute till the onion softens before adding the garlic and cooking for a couple more minutes.  Add all the spices and stir well and continue to cook until fragrant.  Add the tomato paste and mix well before adding the quinoa, chickpeas and water.  Mix again and bring to a boil.  Turn the heat down to simmer the quinoa mixture and cover with a lid.  Cook for 20 minutes then shut off the heat and leave covered for 5-10 minutes before serving.  I like to serve this with a small squeeze of lemon over top or just a pinch more salt and some herbs chopped and sprinkled over top.
