Wholesome Baked Oatmeal

This is the oatmeal that went over so well yesterday.  My son insisted on eating it for lunch after he had shared my breakfast with me.   Fine by me, it’s full of good stuff, and there’s no added sugar unless you add some on top.  I didn’t feel the need to(except for a tiny teaspoon of honey on top), it was the perfect sweetness for me.  But before I give you the recipe for that… Here are some pictures of the most adorable baby goats I mentioned a few days ago 😀

We had so much fun with them!  They’re so playful, jumping and running around. I had no idea how hard it was going to be to get pictures of them.  I had a hard time picking these few out of the ones I did get though.  I didn’t want to make the pictures too big, but you can click on them to see a bigger version if you want.  They are just too cute!  My brother-in-law and sister-in-law just got these little guys and their mother this last weekend 🙂

Wholesome Baked Oatmeal

Ingredients

  • 1 banana mashed very well
  • 2 eggs
  • 2 tablespoons flax seed ground
  • pinch of salt
  • 1 1/2 cups milk any kind will work fine, I used almond
  • 1-2 teaspoons cinnamon
  • 2 teaspoons vanilla
  • 1 tablespoon blackstrap molasses optional
  • 2 cups old fashioned rolled oats
  • 2 apples cored and chopped
  • 4 large medjool dates chopped into small pieces
  • 1/4 cup walnuts roughly chopped

Instructions

  • Preheat the oven to 350 degrees.  Grease a 8x8 pan.
  • Combine the mashed banana, eggs, ground flax seed, salt, milk, cinnamon, vanilla and molasses in a small mixing bowl.  You can even substitute an equal amount of honey for the molasses if you want, but it's not necessary, you can leave it out completely.  In a larger bowl mix the oats with the chopped apples(with or without skins), the chopped dates and the walnuts.  Mix well being sure the dates are evenly combined with everything else as they stick together and you want them evenly spread out in the whole dish.  Pour in the wet ingredients and mix well.  Pour into the prepared pan and bake at 375 for 30-35 minutes.  You can top with a sprinkling of extra cinnamon before baking if you like.  Leave it to cool for 10-15 minutes before serving, if you can wait that long 😀  Serve with extra milk and a drizzle of honey or maple syrup.

    this baked oatmeal is actually not vegan if the recipe calls for eggs.

      Please let me know where I said it was vegan so I can change it! You can omit the eggs and use non dairy milk if you’d like to make it vegan 🙂

      Hehe, I’m so glad I get to enjoy them without actually having to have one. Best deal ever!
      Yes, my kids love it and I’m so glad 😀 What’s nice is you can leave out things like the nuts for younger kids if they haven’t had it yet and don’t want to introduce it to them yet.

      They are! Although the mom always looks scared and nervous. I would be too in a new place with new people with my babies I guess.

    The baked oatmeal looks tasty! I must try it soon. I´ve actually tried it once, but I forgot I put it into the oven and remembered like 2 hours later which was really too late:))

    Looks and sounds delish! I’ve heard of soaking your oats over night before using them. Do you do this? If so what do you soak them in?
    Looking forward to trying this in the morning!
    Oh and are the goats dwarf? What type? I’d love at least two when we finally officially settle down somewhere. Their milk is delicious too!!

      I have heard of soaking your oats but I’ve never actually tried it, except for overnight oats which you might have seen around. I need to do some research on soaking oats before cooking them because I’m not sure what you use or how to do it. Sorry I can’t be of more help! I hope you enjoy it if you do try it!
      Nope, the goats aren’t dwarf, they’re just only a month or so old. I’m not sure exactly what kind they are but I can find out for you if you want. I know the mom is supposed to be a good milker. I remember having goats milk as a little kid, it is so good! 🙂
