Hello there! My name is Erin. Perhaps you know me from my other blog, Texanerin Baking? Baking is on my mind – all the time. So I bake a lot. I used to bake oodles of really unhealthy goodies but then I realized that I couldn’t continue baking once or twice a week and remain healthy at the same time.
You know how a lot of healthy recipes taste obviously healthy? Just kind of… bla? I don’t like that. At all! My aim is to create simple, healthier recipes that – most importantly – taste just as yummy as the original not-so-healthy versions! No cardboard-y or grain-y taste here.

You’re great! Your recipes and overall outlook on food/health are really inspiring. Vegetarian for 3 years from 13 to 16, vegan for 6 months and, now 23, I just recently fell out of eating so healthy with my boyfriend and I moving into our new house (lots of junk and convenience food 🙁 ). So THANK YOU and kudos to you- knowing you have three kids and a husband to take care of certainly puts my habits in perspective!!

I know all the previous comments have said it, but I just wanted to repeat that the blog is great! I have JUST discovered it, and bookmarked it!
I recently read a book called Eating Animals, by Jonathan Safran Foer, and I think it would be of interest to you. It is a very informative book about what the animals that we consider “food” in our country, and he is an excellent writer. It can be a bit harsh and graphic at times, but I think it is a book we should all read and understand as we make our food choices. I hope you get a chance to read it. It sounds like you’re already ahead of the game, but nevertheless it is an eye-opening book. I consider myself pretty informed, and it definitely completely shifted my view of, well, eating animals.

Your blog has so many good recipes, I can’t wait to try some of them. Do you grow most of your vegetables? Or do you buy them from the grocery/farmers market?
Aw thank you! I do have a large garden but a lot of my fruits and veggies still come from the grocery store and the farmers market, although I always prefer the market.

Your way of eating is very similar to mine…mostly plant based but I don’t call myself a vegetarian b/c I eat fish. I don’t want to even call myself a pescatarian b/c I reserve the right to take a bite of my hubby’s burger or my grandpa’s meatballs!

cool blog. At your age I was still eating college fair and adding a senior 15 to my previous freshman 15. I finally got it together, however. It’s nice to see young people already aware of what good food is. keep it up.

How have I never visited your blog before? Your photography is simply stunning. I love your philosophy (and your taco seasoning). We have similar tastes in books, too. Have you read Animal Vegetable Miracle by Barbara Kingsolver? It’s a must read. Not your usual polemic. Just inspiring words about food and sustainability.

No I haven’t read that book, but I’ve heard good things about it. I’ve been looking for it at my local library. They have it but it’s always out when I go. I can’t wait to get my hands on it!
