Air Fryer Red Potatoes

These air fryer red potatoes are perfectly crispy, golden, and bursting with flavor, making them a fantastic side dish for any meal. Whether it's a busy weeknight dinner or a holiday feast, they're sure to be a hit.

Ingredients

  • 1.5 pounds (680 grams) red potatoes
  • 2 tablespoons (26 grams) olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon fresh parsley chopped

Instructions

  • Wash and scrub the potatoes. Cut into half or quarters, so that the potatoes are about 1-inch at most.
  • Add the potatoes to a bowl. Drizzle olive oil over the potatoes.
  • Combine the spices and then sprinkle over the potatoes. Stir to combine.
  • Add the potatoes to the basket of an air fryer.
  • Air fry at 400 °F (205 °C) for 20-22 minutes, shaking the basket every 5 minutes, until the potatoes are tender and golden brown.
  • Serve with fresh parsley.
  • You can refrigerate leftover potatoes in an airtight container for up to 3-4 days. Reheat them in the air fryer at 350 °F (175 °C) for 5-7 minutes to restore their crispiness.

Notes

I used baby red potatoes and cut them in half. You can also use larger red potatoes and cut them into smaller 1-inch (2.5-cm) cubes instead.
