- Peel and cut carrots into matchsticks. If you just wash and leave on the peel, the carrots might be slightly bitter. Be sure to cut an even size so that the fries cook evenly at the same speed.
- In a large mixing bowl, combine all ingredients except the parsley and stir until the carrots are well coated but not dripping in oil.
- Put the carrots in the basket of the air fryer, shake to get an even layer, and cook at 400 °F (205 °C) for 15-20 minutes, stirring after 8 minutes, and cook until golden.
- Remove and sprinkle with chopped parsley, if desired, and serve immediately.
