Just a quick one from me today. I feel a bit bad posting these “non-recipes”. Fruit salad is not something you need a recipe for, at least in our house. Throw any and all different kinds of fruits in a bowl and call it a fruit salad. Especially in our house we have no problems with fruit so I very rarely feel the need to dress it up. This was just one of those times I wanted to do something a little more special than just cut up pineapple in the fridge.
As an afterthought, I threw some mint into the picture because I think it would be delicious very finely chopped or chiffonaded and tossed into the salad. Maybe then it would be a Pineapple and Blueberry Mojito Salad. I don’t know about you, but that sounds good to me 😀
Anyways, I couldn’t resist sharing. This was yummy, simple and looked pretty too 🙂 Enjoy, and have a great weekend!
Pineapple Blueberry Lime Salad
- 1/2 large fresh pineapple, peeled, cored and cut into bite sized pieces
- 2-3 C fresh blueberries
- Zest of 1 lime
- Juice of 1/2 lime
- 1-2 tbsp honey
- Greek yogurt for serving, honey flavored or plain with a small amount of honey stirred in
In a small bowl, whisk together the lime zest, lime juice and honey. In a larger bowl combine the pineapple and blueberries. Pour the honey mixture over top and stir to combine. Serve immediately or store in the fridge for up to 2 days until ready to serve. Stir well before serving and serve with a dollop of honey Greek yogurt.
